New Paleo Recipes I’m Loving

As I’ve said before, I just am not that creative when it comes to making up my own recipes. Otherwise I would have a recipe blog and be famous. Obviously. Aside from the obvious issue with not being famous, being uncreative in the kitchen can be a problem when I get to the end of the month… ok the end of the summer… and realize I’ve been making the same crock pot pulled pork and pan roasted chicken every week since I can remember. So, I went digging through the internet for some new material, and I thought I’d share with you the recipes I’ve been loving this summer, and a few that I can’t wait to try this weekend!

First up, some old standbys…

Mark's Daily Apple--Crispy Carnitas

Crispy Carnitas from Mark’s Daily Apple - I have made some version of these almost every week this summer, and they are awesome. I especially love the cinnamon kick! I use a slow cooker instead of the oven and just put it on low for 6-8 hours, which seems to do the trick.

Pan Roasted Chicken Thighs from epicurious – I have probably mentioned this recipe 10x on this blog but this pan roasted chicken recipe is still a favorite, though I use butter or coconut oil instead of vegetable oil.

Asian Chicken Thighs from Nom Nom Paleo – These are just as easy to make as she promises and the flavor is amazing. I don’t have a wire rack so mine come out less crispy and more sort of marinated looking, but are still delicious!

    That BLT-lettuce+avocado+egg (I’ve been calling it ‘BETA’ salad :P) is the BOMB. Seriously. SERIOUSLY. Make it this weekend. :D

    That salad looks awesome! And I make “sandwich wraps” by using ham like that — I slice vegetables (whatever I have — peppers, avocadoes, carrots, cucumbers, whatever) and wrap in a slice of ham. 3 or 4 of those make a great lunch!
    Here’s something easy I did yesterday because my husband and son needed something to eat before I got home from work. Beware, I never measure anything…..I put 3-4 boneless chicken breasts in a crockpot with sliced onion, minced garlic, some mustard, and some honey. Quick, easy, and everyone loved it.
